Planning a café or improving an existing coffee operation?

I’ve spent over 15 years in NYC roaster-retailer operations, and advised on over 36 café projects, from neighborhood shops to institutional service.

Today, I help clients with café design, roastery operations, green coffee procurement, QC, and wholesale programs.

Typical Projects

  • I work with you & your project team to make key planning decisions like menu & service scope, site suitability, and equipment selection.

    Once site constraints are established, I help design efficient, cost effective, & compliant equipment placements and layouts.

    I’ll collaborate with architect & General Contractor to ensure electrical, plumbing, millwork, and HVAC are properly coordinated for final equipment installation

  • Multi-location operations quickly develop operational & site-planning bottlenecks.

    I develop standardized guidelines for equipment specification & layout that fit your service model and build-budget.

    Once the work environment is established, I work with your management team to simplify staffing overhead with service level SOP’s, standardized menu execution, and training schedules.

  • I develop QC programs, with replicable metrics, that flag and intercept gaps between sourcing and roaster execution. New or aging components, seasonal fluctuations, and transition between staff or roast systems.

    I handle oversight, or hand-off execution to your personnel.

    I work directly with leadership & finance to identify green coffee supply needs based on your portfolio. We plan redundant coverage, price targets, and market-informed purchase windows in conjunction with import organizations
